I'm one of JH's athletes and this blog post hits the nail on the head. I never used to cook when I was in college and even the first few years post-college (grape nuts and toast for breakfast AND dinner several nights a week). And while I've never been big on going out to eat, once I learned how to actually cook healthy meals, I noticed a huge difference in how I felt. Cooking has become fun, even if it's a bit time consuming. My husband and I use cooking as a way to unwind and spend time with each other at the end of the day.

I made this for dinner tonight and it was SOO GOOD! I am not a person that likes to spend time in the kitchen, so for me this recipe was perfect. It allowed me to cook a nice, healthy meal in under 20 minutes. It was definitely a hit with everyone! Thanks Kate for the awesome yummy suggestion! ;-)
