This would be a Key Lime Pie, home made, that is completely Gluten Free – yes, even the crust. If there were one thing that were annoying about being GF, it would be that even though I can still enjoy the cheesecake part of a cheesecake when served at special occasions, no one was making a Gluten Free crust. Well, one that tasted good anyways.
One awesome Christmas gift I received was “1000 Gluten Free Recipes” Cookbook. I know, right? Who knew there were 1000 things to even make, let alone, make Gluten Free?! This key lime pie came out of that book & was so easy, it was ridiculous. And ridiculously good too! Real cream, real limes, real sugar. Lime tartness in the creamy pie. Crumbly, crunchy goodness in the graham cracker crust. That’s right, thing graham crackers are out when you’re GF? Not with this recipe that uses a GF version of graham crackers!
What Michael Pollan says is so true, you can eat “junk” food once in a while (junk food being anything that is not part of your normal diet & is eaten for no real nutritional purpose), IF you make it yourself. When you make it yourself, you control what goes in it, and you know that you won’t be baking or cooking with High Fructose Corn Syrup or Mono & Di- glycerides, fake things that only help you store fat & increase inflammation (neither of which you want to do). Your body knows what to do with butter, eggs, even real sugar! It can process that. It cannot process HFCS with any ease. Also, when you cook/bake with real ingredients, the flavor is stronger, and thus, more filling, so you want to eat less of the junk food.
It really does not take that long to make things yourself – and your body is going to feel so good when you do! I didn’t know how to cook at all when I first moved out of my parents’ house. Now? I’m no chef, but I try to get better every chance I have – and you can too! You’re going to have to go through a few mis-fires to get to meals that are actually awesomely good, that took very little time, and that you eat & think, “Holy cow! I’m pretty good at this cooking thing!” But getting there is so worth it (literally, as it costs less money to eat at home & figuratively, because it will save your health & waistline & will be a mini-”yay me!” every time you successfully make something!
