For lunch, I made a baby spinach salad with the last of the heirloom tomatoes, artichoke hearts marinated in olive oil, & balsamic vinegar. I added gluten-free turkey slices wrapped around cilantro hummus, but I didn’t take a picture of those as turkey with green stuff inside just doesn’t look all that great.

So much fiber & gluten-free goodness that I couldn't finish this!
And for dinner, I made organic, pastured beef hamburgers stuffed with diced jalapenos & seasoned with sea salt & lots of black pepper. Those went onto the grill with a slice of yellow onion & a bunch of asparagus drizzled in olive oil & also dusted with sea salt to make them crispy. That was my dinner, and pictured here was the “add-on-calorie-version” my boyfriend put together when he got home – still gluten-free, just with an increased calorie load from the brown rice.

**And quick cooking!! less than 30 mins when the grill is at medium high heat, & less than 5 mins to put the salad together.**
