Gluten Free Showcase: Salads & Burgers!

Because nobody believes me when I tell them I and my boyfriend – the athlete  who needs a million calories a day – eat gluten free & are not starving all day from the lack of food. Being gluten free due to a gluten intolerance (non-Celiac’s) has totally changed my life – for the better! It’s made me refocus my tastes on the flavors of the food itself, not the sauce or coating that you put on the food. I believe food tastes better when prepared simply – take two of yesterday’s meals as examples.

For lunch, I made a baby spinach salad with the last of the heirloom tomatoes, artichoke hearts marinated in olive oil, & balsamic vinegar. I added gluten-free turkey slices wrapped around cilantro hummus, but I didn’t take a picture of those as turkey with green stuff inside just doesn’t look all that great.

So much fiber & gluten-free goodness that I couldn't finish this!

And for dinner, I made organic, pastured beef hamburgers stuffed with diced jalapenos & seasoned with sea salt & lots of black pepper. Those went onto the grill with a slice of yellow onion & a bunch of asparagus drizzled in olive oil & also dusted with sea salt to make them crispy. That was my dinner, and pictured here was the “add-on-calorie-version” my boyfriend put together when he got home – still gluten-free, just with an increased calorie load from the brown rice.

thumbs up for gluten free!

Two great meals that let the true flavors of food taste through – no chemical garbage, no HFCS, no trans fat, only real. simple. flavorful! Eat healthy & gluten- free, you’re worth it.

**And quick cooking!! less than 30 mins when the grill is at medium high heat, & less than 5 mins to put the salad together.**
