I was running home between clients today & needed to get something in my stomach for a mid-morning snack. Gotta eat every 4 hours to keep that metabolism running high! I had a banana laying around- I don’t usually eat bananas, or really that much fruit at all besides berries due to the high sugar content & having been a Candida sufferer in the past.
*Candida is a yeast that lives in your body normally but when given the right opportunistic conditions, it will over grow & create havoc in your body. The list of common issues for someone with Candidiasis is a mile long, but ones I’m familiar with are brain fog, glue ear, recurrent yeast infections & UTI’s, itchy skin, digestive disorders, reflux, frequent & consistent congestion, PMS, and the list goes on and on. One of the key treatments for this is a change in your diet, the Big 3 changes being: taking out all sugar (including that in fruit as any sugar is the main feeding source for Candida & you are trying to starve it out), removing all alcohol & all caffeine. Fun times! Anyways, since being cleared from Candida, I still practice as much of the diet as I can so that I don’t re-develop the Candida issue.
But I digress…I was running home & back out again and needed something quick. It’s grocery day here, so here’s what I found & put together. Sorry no pics, but I wish I would have because it was worthy of a pic on the blog!

let's go bananas!
- 1 banana, sliced (if you deal w/ Candida, you should be going for somewhat green bananas; less sugar than ripe)
- 1 tsp honey
- handful chopped walnuts (estimating about 1/2 of a 1/4 cup)
Throw sliced banana in bowl, drizzle with honey, drop walnuts in on top. The honey makes everybody stick together & provide a subtle sweetness to go with the crunch & nutty-ness of the walnuts.
You’ve got your protein & healthy fats from the nuts, a little carb action from the banana, and quick energy from your honey. A mighty tasty little snack if you ask me! Try it & tell me what you think!!

What is the nutritional difference between the raw plain walnuts and if they were lightly toasted?

In response to your question Bre, there is no real nutritional change that happens when you toast/roast nuts vs. eating them raw. The only thing that will change is that toasted nuts will go rancid much quicker than the raw. To prevent this, only toast how much you’ll eat within a week & store them in an airtight container in the fridge. Remember that nuts do go rancid no matter if raw or toasted if left around too long, so it’s best to buy only the amount you’re going to eat within 2 weeks. Also note that there are higher amounts of mold in peanuts & pistachios so if you have Candida issues, you should avoid these nuts entirely.
